The oil
From the olive-tree woods, which are
cultivated with traditional methods,
we gain our oil: when the olive-trees
reach the degree of optimal ripe, the
berries are picked by hand, taken straight
to the rub and pressed every third day.
Due to these operations, our oil preserves
its characteristic taste and its acid content
is indeed zero.

In San Quirico d'Orcia, at the beginning of
every December, the traditional oil-festival
is organised. This is the perfect opportunity
to taste our oil and take part on our unique
feast.
